Two Bars I Can’t Shut Up About right now
🍹 Liquid Diet
This one’s tucked behind a graffiti-ed alley on S Commerce St—a little hidden, a little grungy, and incredibly cool once you're inside. The vibe? Industrial meets experimental lounge, with a little bit of witchy backyard energy thrown in.
Liquid Diet runs more like a culinary lab than a bar. Syrups, cordials, and garnishes are all prepped in their back “cocktail kitchen” and brought forward with absolute precision when it’s time to shake. The drinks are bold, strange, and deeply satisfying.
The pico de gallo michelada is a standout—light, spicy, and oddly refreshing. But the apple martini surprised me the most. It’s got layers, texture, and clarity that most bars can’t touch. If you’re even a bit into cocktails, this place must be on your radar.

🐆 Prowl
Prowl is brand new and already feels like a neighborhood fixture. It’s right next to Stray Pirate (which you know I love), and it’s from the same creative team—but this time they’ve swapped the tiki theme for full jungle glam.
The space is lush and dramatic—think deep greens, gold accents, tropical heat, and just enough mystery. The cocktail list leans fruity, fresh, and fun, but it’s not all fluff. These drinks have structure and balance.
Start with the Neon Flamingo—it’s pink, citrusy, and super drinkable without being too sweet and has a spectacularly long tart finish.
If Stray Pirate is your laid-back beach vacation, Prowl is the sultry rainforest after dark.

🔥 Why They Matter
These two spots show how diverse and exciting Vegas bar culture has become. Whether you’re in the mood for wild experimentation (Liquid Diet) or an immersive, vibey hang (Prowl), you’ll walk away impressed—and probably a little buzzed.
In case you’re trying to find Prowl, it’s right here. (Arts District, Las Vegas, NV)
