This enormous steamed dumpling is packed with tender, flavorful short rib, but the true star is the roasted-shallot au jus — a rich, salty umami bomb that might be the finest jus on earth. I’ve been back at least four times since my first bite last winter. On my birthday, I joked about wanting more jus, and a few minutes later the waiter quietly set down a cup… then returned with a straw. Yes, I used it. And yes, I wished it was a bubble-tea straw.

Pro tip: grab a whole pie made to order. A slice to go is great, but the full, fresh Rosa? Life upgrade.

Plot twist: some of the best ribs I’ve had in this city came from inside a hotel sports bar. Rich, juicy, sticky with collagen, falling-off-the-bone perfection — and the sauce? Outstanding. Even the fries were worth writing home about, and the portion could feed a small, happy army. This beat out dedicated BBQ spots, which feels almost illegal.

Five stars. Will eat again and again. Big bones with loads of rich marrow, roasted with a sweet-herbal caramelized topping that tastes like someone cast a spell on it. The bread is perfect. The portion is generous. Walk in, grab a bar stool, order a drink and this dish, and let happiness happen to you.

All’Antico Vinaio is a Florence legend that’s been serving absurdly good sandwiches in Italy since 1991, and the Vegas outposts bring that same magic stateside. My first bite of the Dante at their new Venetian Food Hall location actually made me cry in public. I’ve since worked my way through at least six different sandwiches here — both in-person and via delivery from their original UnCommons location — and not one has missed.

They look simple on paper: quality meat, fresh vegetables, pillowy schiacciata bread, and a creamy component. But the flavors and textures are so dialed in — salty, tangy, crisp, soft, chewy — that each bite feels perfectly engineered. Absolutely fantastic; if you’re anywhere near the Venetian, you must go. Even if you think you’ve had great sandwiches before, these will reset your standards. It even gives my hometown favorite Zingerman’s a serious run for the money!

Vegas will feed you until you’re spoiled. These dishes are proof that the city’s food game is just as over-the-top as its nightlife. Come for the lights, stay for the bites, and don’t be surprised if you find yourself booking your next trip before you’ve even paid the bill.
